Tofu Goodness Just For You



Just wanted to offer up another tofu recipe. This one will likely be more appealing... I mean, who doesn't love smoothies?!?!?! The thing with this recipe is that it hides the tofu really well because it calls for silken tofu. Silken tofu basically has the consistency of yogurt so it's a perfect swap.


Ingredients:


6 ounces silken tofu

1 medium banana

2/3 cup soy milk (any milk works really, but you can get the vanilla soy and it's a nice bit of flavor)

1 cup frozen or fresh berries of choice (you can always get frozen strawberries or blueberries)

1 tablespoon honey

2 -3 ice cubes, optional


A quick word on honey: It's an awesome natural sweetener but it is higher in calories than some people might prefer. Personally, I'm a fan. Honey gives you a great burst of energy, it's a proven immunity booster, and if you use local honey it can help with allergies. It doesn't take a ton of honey to sweeten up the smoothie. I know Splenda and Truvia are taking over the world but, just try it with honey first. :)


This is a great breakfast option or, if you freeze it, makes a yummy dessert, too. AND... it's a really great post-workout protein drink that actually tastes good.

Local honey is wonderful. The type of honey adds a flavor note as well. The Sacramento Bee Company on the corner of X and 21st Street is a great source. They have honey on tap if you bring in a jar or buy one from them. They also sell bee keeping supplies, Burt's Bees product, raw wax, and raw pollen for allergies. Staff are knowledgeable and friendly. Curious about anything bee related? Stop by and ask 'em.

And thanks for the recipe. I've been trying tofu shakes since your last post but haven't found a good recipe.

This looks great! I bought some silken tofu at the co-op--I found the extra soft in the Asian foods section in vacuum-packed boxes rather than the refrigerated section (there's tofu there too).  I also have some mango puree from Trader Joe's.  Looking forward to my next smoothie!
